Santorini Wineries

The microclimate of the island shows some peculiarities: the volcanic soil of Santorini is a mixture of chalk,  coal, ash, lava and pumice.The island is extremely dry during the summer months when the vines are mature, the days of extreme high temperatures. At the same time blow the north winds of Meltemia that prevent the moisture exchange of the vines during the day. At night, however, when the temperatures drop with suction, the volcanic soil moistures and nourishes the vines. As a result of this unique combination of soil and climate, the vines mature quickly to Santorini and retain their acidity. Like everything on the windswept Santorini have the vines their individuality. To protect the grapes from the wind, the vines are cut ring shape so that the grapes grow in the “interior”.

There are about 10 varieties on the island, many of which were known since ancient times. Today only a few of them are used for winemaking. First is the Asyrtiko, followed by the white, light Aidani, reminiscent of a muscat wine.

Wines
